Here are three easy and healthy dinners you can make in under 30 minutes.

Roasted Chicken Breast with Root Vegetables

Chicken with vegetables is a classic meal with high nutritional value. For this recipe, use whichever root vegetables you prefer. Some suggestions are parsnips, beets, carrots, onion, and sweet potato.

Method: Pre-heat the oven to 350 degrees Fahrenheit; prepare two baking pans. Toss vegetables with extra virgin olive oil until thinly and evenly coated, and then sprinkle lightly with salt. Arrange the vegetables on a pan in one layer. Rub the chicken breast with extra virgin olive oil, then rub with salt, pepper, oregano, and rosemary. Add the pans to the oven and bake for 25 minutes. Stir vegetables halfway through cooking. Serve hot.

Stuffed Sweet Potato

Cook your sweet potato it in the microwave for a fast dinner of healthy starches. 

Method: Wash your sweet potato, then pierce the skin a few times with a fork. Wrap it with a damp paper towel and microwave for five to seven minutes, checking its softness every few minutes. Use oven mitts to remove the potato when finished as it will be scorching. Cut the potato lengthways and top with black beans, salsa, and guacamole. Eat as is for a vegetarian or vegan option, or add pre-cooked meat.

Mashed Potato and Vegetables Bowl

This healthy bowl makes the perfect comfort food after a stressful day at the office.

Method: Using the method above, cook your potato in the microwave. Scoop it out of the skin and mash it in a bowl with non-dairy milk and a small amount of butter, adding salt to taste. Set aside. Sauté your preferred vegetables (options include mushrooms, onions, carrots, and spinach) in extra virgin olive oil in a pan over medium heat. For a quicker sautéing time, cut the vegetables into smaller pieces. In a bowl, layer the potato first, then top with vegetables and enjoy.
