Quick, Healthy Recipes for Busy People: Gluten-free Garlic Lemon Chicken Pasta

It can feel like time is the enemy when it comes to eating healthy. Preparing a nutritious meal after a long day at work often seems like a daunting task. However, healthy doesn’t have to be complicated or time-consuming.

There’s no need to grab fast food when you can whip up a meal like this in no time.

Garlicky Lemon Pepper Gluten-Free Chicken Pasta with Kale

1 tbsp. olive oil

1 chopped small onion

3 cloves of garlic, crushed

1 tbsp. white wine

1 ¼ cups chicken stock

3.5 oz. gluten-free pasta

4 tbsp. coconut milk

2 grilled chicken breasts, chopped

2.5 oz. kale

1/2 tsp lemon juice

Zest of half a lemon

Pinch of salt and pepper

Parmesan, grated

Method:

Add olive oil to a medium-sized frying pan on medium heat. Fry onion in olive oil for a few minutes until translucent. Add garlic and white wine and bring to a boil. Let it simmer gently for two minutes. Add stock, pasta, and milk.

Cover and reduce the heat and cook for five minutes. Add in the chicken breast, stir and cover again. Cook for another 7-10 minutes until the pasta is almost cooked through.

Once the pasta is almost ready, add the kale to the top of the pasta and put the lid back on to allow the kale to steam for two minutes.

Take the pan off the heat, stir in the lemon juice and zest. Sprinkle with parmesan and salt and pepper.

Dinner is served!
