Colour Your Plate—Green with Avocado & Breadfruit in This Easy-To-Make Snack

We like eating green.
Maybe not as children, but as adults, most of us need little convincing to ramp up our consumption of green foods.
In recent times kale has become increasingly popular among healthy eaters, and with good reason—it’s high in fibre.
Broccoli is another nutrient-dense vegetable. It’s one of the most nutritious foods on the planet. Adding broccoli to your meal plans will result in a diet rich in vitamin E and K, folate, potassium, iron, manganese, B vitamins and protein. It’s a superfood!
Indoles, sulforaphane and isocyanate are also found in green fruits and vegetables. All three plant compounds are said to contain anti-cancer properties as they ward off carcinogens.
Also, green leafy vegetables are wonderful sources of folate. We did say it was a superfood.
This colour group offers lots of vegetables from which to choose for a tasty recipe. How about something fun, and easy to make?

Give this scrumptious breadfruit chips and avocado dip a try.
Fried breadfruit with avocado dip
2 medium-sized avocados peeled and pitted
1 tablespoon lemon juice
1 tablespoon mayonnaise
¼ teaspoon salt
1 clove garlic minced
1 breadfruit peeled and sliced thinly
Canola oil for frying
In a bowl, combine avocados, lemon juice, mayonnaise, salt and garlic. Mash until the dip is creamy. Set aside dip.
Heat oil in a deep-fryer or saucepan and fry breadfruit until both golden brown on both side. Remove from deep-fryer or saucepan. Place fried breadfruit on a paper towel-covered plate and sprinkle lightly with salt. Serve breadfruit along with the dip.
