In the Kitchen: G’s Brown Sugar Jerk Glaze

One of Jamaica’s most iconic foods is jerk. Jerk chicken, pork, even jerk lobster… jerk is one of our famous staples.

Chef Gariel Ferguson, mastermind behind the mouth-watering food at the Joy Spence Appleton Rum Experience, is helping you take jerk to the next level. His brown sugar jerk glaze is sure to be a hit in your kitchen.

Ingredients:

12 ounces bottled jerk seasoning

1 cup brown sugar

½ cup vinegar

2 tsp ground cinnamon powder

1 tbsp. grated fresh ginger

¼ cup molasses

Instructions:

Combine all ingredients in the jar of a blender and puree to a smooth pourable consistency. Store refrigerated in a glass jar with an airtight lid.
