Yello wants to help make eating healthy easier. So we’ve asked Chef Amanda McCreath to share some of her recipes and kitchen tricks for making quick and healthy meals.

You’ll find salmon on almost every list of foods that are good for you. This fish is full of omega-3 fatty acids that your body needs. It’s a great source of protein and full of potassium.

Amanda explains how to make your own cured salmon that can be the protein in any healthy dish.

Cured salmon, also known as gravlax, is simple to make but you will need to do this ahead of time. Prep the salmon on the weekend and you’ll have it ready to go for a quick weeknight dinner.

All you need is salmon, salt, sugar, and seasoning!

Here’s how to make cured salmon.

Season salmon with one part salt to two parts brown sugar. Add garlic and black pepper for more flavour.

Leave in the fridge for two days.

When you’re ready to use the salmon, wash off the seasonings, and then re-season with garlic powder and black pepper to taste.

Broil for 10 minutes and serve with brown rice and veggies or your favourite garden salad.

There you have it! Gravlax that will be ready to eat in a flash for your healthy mid-week lunch or dinner!
