Quick Cooking: Three Easy Lunches for the Office

When it’s a busy week at the office, sometimes you just don’t have the time to go out for lunch.  

Think ahead with these quick and easy lunches; prepare them at home and pack them to eat at your desk or break-room. 

White Bean Salad

Salads are one of the easiest lunches to throw together in a hurry. For this white bean salad, you won’t even need to pre-cook meat or chop veggies! Whether you’re vegetarian or just looking to save some time prepping ingredients, this salad is a great healthy option for those who are strapped for time.  

Method: Add baby spinach, arugula or a combination of both to a bowl. Add grape tomatoes, cannellini beans, dried or fresh rosemary, dried or fresh basil, and a crumble of feta cheese. Toss with olive oil and balsamic vinaigrette. Add salt and pepper to taste.   

Taco Wrap 

Enjoy taco Tuesday at the office with a wrap that’s easy to eat on-the-go.  

Method: Prepare guacamole by combining smashed avocado, chopped onion, salt, lime juice and cilantro in a bowl. Spread the guacamole onto a tortilla. Add sliced rotisserie chicken or chicken that you’ve pre-roasted the night before. Add grated cheese, chopped olives, chopped sweet peppers, diced tomatoes, and black beans or canned refried beans. Wrap tightly.  

Bento Lunch Box 

With bento boxes, you can put all your no-prep foods into one container for munching throughout the day, or for lunch made up of smaller-bites.  

Method: Add any desired no-prep foods to each segment of your bento box. Try these ideas: pretzels or carrot sticks with dip, pre-sliced charcuterie meat, fruit that doesn’t require prep like grapes or blueberries, easy-to-make sandwiches like peanut butter and jelly or tuna, cut into smaller triangles.  

When your to-do list is more like a to-do novel, eating lunch might be the last thing on your mind. Remember, food is fuel!  

These quick and easy lunches will keep you functioning at your best without taking up too much of your time.
