Quick Cooking: Three Fast Breakfasts for Mornings When You’re Rushing out the Door

Breakfast is the most important meal of the day, but when you’re rushing out the door, a hearty meal is often the last thing on your mind.

Here are three quick breakfasts that you can prepare in no time.

Avocado Toast with a Fried Egg

Need a breakfast that will give you lots of energy, but won’t take long to make? Look no further. With this meal, you’ll get carbs, healthy fat, and protein to fuel a busy day.

Method:

Place your desired number of bread slices in the toaster. While they’re toasting, prepare your avocado.

Cut open an avocado, remove its pit and mash the flesh in a bowl until smooth. Mix in salt and lemon juice to taste; set aside. Add a drizzle of olive oil to a pan and warm over medium heat. Crack in an egg (or multiple eggs, depending on your number of bread slices), and fry until the whites are opaque, flipping so that each side is evenly cooked.

Layer the avocado mash onto the toast, then top with the egg and enjoy. Add extra salt, pepper or paprika for more flavour.

Berry Parfait

Berry parfaits are a great sweet breakfast loaded with probiotics and vitamins. To save even more time, choose fruits that don’t need chopping like blueberries or raspberries. No time to eat at home? Prepare the parfait in a mason or jam jar and seal it; carry it to your destination and enjoy.

Method:

Layer a yogurt of your choice with a row of berries and repeat the process until the jar is filled. Add honey to Greek yogurt for extra sweetness, or sprinkle in nuts for crunch.

Omelette in a Mug

Did you know that you don’t need a stove to make an omelette? That’s right! You can make an omelette with your office microwave.

Method:

Chop sweet pepper, green onion, ham, and cheese the night before. In a mug (coated with butter or olive oil), combine a whisked egg with your chopped ingredients, salt and pepper; stir to combine. Cook in the microwave at 20-30 second intervals, stirring between each interval. Be sure to watch your egg carefully so that it doesn’t burst. Depending on the wattage of your microwave, you may need to lower or increase your cooking interval time, so it’s best to test ahead of time.
